TSUJI ACADEMY

Our College originated in the Headquarters of the Japan Kappo Cooking Seminar, established in 1917. In 1959, the current College was opened and accredited by the Minister of Public Welfare. Its aim was to develop superior specialized instruction manuals and thus pursue new cooking techniques and theories while respecting the traditional good taste of Osaka, The year 1959, therefore, marks the establishment of Osaka Nakanoshima Tsuji Japan Professional Cooking Academy, the largest professional cooking educational organization providing instruction in professional techniques and cooking knowledge.
Since its founding, our College has continuously expanded its facilities to include the latest equipment and apparatuses, while upgrading and expanding the range of classes to meet the requirements of an ever growing industry. Moreover, first-class chefs and language instructors have been invited to offer specialized cooking instruction at the world’s highest level.
Leading to today, these activities have greatly contributed to the culinary industry and expanded the network as the Cooking Academy.

HISTORY

1917 Tokumitsu Tsuji (first president of Japan Kappo Cooking School, father of Isao Tsuji established the headquarters of Japan Kappo Cooking Seminar in Azabu, Minato-ku, Tokyo.)
1927 Established Japan Kappo Cooking School Publishing Department.
Started publication of monthly cooking journal, “Home and Cooking”.
1934 Established Dojima Building Kappo Cooking School in Dojima,Kita-ku,
Osaka.
1957 Established Tsuji Cooking School Kobe. 
(to expand refined home cooking)
1959 Established the Tsuji Japan Professional Cooking Academy(recognized by the Minister of Health and Welfare)* Japan’s first professional chef academy.
1972 Established Vocational Overseas Training System (approved by the Labor Ministry of France).
Dispatched 29 graduates to first-class restaurants in Paris.
1973 Dispatched graduates to Japanese Embassies abroad (in India,Cuba and Morocco).
1981 Established Nakanoshima campus Tsuji Academy Professional Cooking College.
1985 Established the Tsuji Academy Nutrition Technical College (for training professional nutritionists)
2006 Completed new school building based on the concept: “fusion of tradition and leading edge.”
Changed the names to Tsuji Academy, Cooking & Confectionery Vocational School, and open the professional pastry course.
2007 Celebrated our 90th anniversary
