Fillet the fish, retain the backbone on one piece. Cut the pieces in two and dip them and the head in boiling water briefly, then
soak in ice water to cool rapidly.

Rinse the rice and soak in water for a while. Drain the rice and put in a microwavable container with stock. Check the taste and
stir once. Place the fish on top of the rice, cover with plastic wrap and cook in a microwave oven at 800W for 20 minutes.

After the rice is done, let it stand for approx. 10 minutes. Serve on a dish and garnish with pepper leaf-buds.
