Japanese Sake Pudding

(A dish based on an egg and sake drink)

Ingredients

Serves 6 to 8

Ingredients:
2 eggs
150cc milk
150cc Japanese sake
50g sugar



Directions

  1. Beat the eggs, and stir in the sugar, milk and sake. Strain the mixture once and pour in individual cups.

  2. Place the cups on a dish in a microwave oven four at a time, cover with plastic wrap, and cook at 200W for approx. 7 1/2 minutes(*).

  3. After it sets, let cool and chilled before serving.

Tips:

  • *The cooking time varies somewhat depending on the initial temperature of the mixture.

  • The proportion of milk-to-sake may be modified according to taste. However, the less the proportion of milk is, the less solidifying the mixture becomes. If this is desired, decrease the total amount of the mixture.

  • When cooking custard, such as chawan-mushi, in a microwave oven set at high power, the custard is likely to become "spongy" because the temperature rises too rapidly. If it is cooked at 200W (low), a smooth custard can be made, though it will take longer.
