Sesame Tofu






Sesame Tofu is a kind of tofu made by sesame tasting like "Jelly". (Normaly tofu is made by soybean.)
Let's try this nutritious and low-calorie diet with using the microwave oven.

Ingredients

Serves 4

Ingredients:
(For jelly)
1 cup water
20 - 25g arrowroot starch + 2 tablespoons water
2 tablespoons pounded sesame seeds

(For sweet miso-flavored sauce)
20g red miso (bean paste)
40g sugar
1 tablespoon mirin
1 tablespoon sake



Directions

(Sesame Tofu)
  1. Dissolve the arrowroot starch in 2 tablespoons of water and stir well so as not to leave any lumps.

  2. Pour the water in a heatproof bowl and boil it in a microwave oven.

  3. Remove the bowl from the microwave oven immediately after the water comes to a boil, and gradually add the starch and water mixture while whisking (in the same manner as thickening sauce).

  4. Add the pounded sesame seeds and stir well.

  5. Scrape the edges of the bowl clean with a rubber spatula and heat the contents in a microwave oven at 500W for approx. 1.5 minutes.

  6. Remove the bowl from the microwave oven and whisk the mixture well. Clean the edges of the bowl and put it back in the microwave. Heat at 500W for 30 seconds.

  7. Again, whisk well and pour the mixture in a rectangular tin mold, then chill until it sets.


(Sauce)
  1. Combine all the ingredients in a bowl, whisk and then heat in a microwave oven at 500W for approx. 1.5 minutes.

  2. Remove from the microwave oven, whisk again and allow it to cool.


(Serving)
  1. Remove the Sesame Tofu from the mold and cut into bite-size pieces using a wet knife. Serve on a dish and pour some sauce over it. (Instead of using the sauce, you can place a pinch of grated horseradish on it and pour on some soy sauce.)


Tips:

  • A microwave oven is useful when you cook thick or sticky food because it will not scorch or stick.
  • Although it is difficult to prepare a small amount of sauce in a pan without scorching, it can be done easily using a microwave oven.
  • To ensure that you have ample time to allow the starch to set, adjust the amount prepared according to the length of time available to chill the Sesame Tofu.
