Cut the bamboo shoots and carrot into 2`3mm cubes. Boil first and then, cook in seasoned stock, separately.

Boil the peas in salted water. Boil the rape plant. Soak the peas and rape plant separately in seasoned stock.

Break the eggs in a microwave-safe bowl. Beat well and season with the light-colored soy sauce, salt and mirin. Cover the bowl with a sheet of plastic wrap,
and cook in a microwave oven at 500W for approx. 2 minutes.

Remove the bowl and beat the eggs using an eggbeater. Then, cook in a microwave oven at 500W for approx. 2 minutes again.

Remove and beat the eggs again to make half-done scrambled eggs. Add the drained bamboo shoot, carrot and peas, and mix.

Slice the fish into 3mm-thick pieces, and sprinkle with salt lightly.

Spread 4 sheets of plastic wrap, align 1/4 of the fish in a row over each sheet, and add the egg mixture on top of the fish. Roll up the plastic wrap to make 4 cylinder-shaped rolls.
Cook in a microwave oven at 500W for 2.5 to 3 minutes.

For sauce, combine the stock, sake, mirin and salt in a bowl, cover with plastic wrap, and heat in a microwave oven at 500W for 4.5 minutes.
Stir in the water and potato starch mixture, and cook for another minute to make the sauce thick. Remove from the microwave and add the ginger juice.

Remove the plastic wrap from the egg cakes, cut each into 3 equal lengths, and place them on serving dishes. Heat the rape plant in a microwave oven at 500W for 10 seconds,
and put on the side. Pour the sauce over the dish and serve.
Tips:
- By using a microwave oven, dishes like scrambled eggs can be cooked without being scorched.
- If you place a cylinder-shaped piece of food at the center of the turntable to cook it in a microwave oven, the middle part is left uncooked. This is because the center of the turntable is the area least exposed to microwaves.
To cook the food evenly, place it at the edge of the turntable. When you cook 4 cylinder-shaped rolls, such as in this recipe, place them on the turntable in a square formation.
