Savory Steamed White Fish

Ingredients

Per serving

Main ingredients:
1 slice of sea bream (preferably bdryx splendens)
1 piece of Welsh onion
1/4 bunch spinach
1 teaspoon fermented soybean yeast
A small amount of red bell pepper
A small amount of Chinese parsley

Preliminary seasonings for fish:
1 tablespoon sake
A dash of salt
A small amount of green onion
A small amount of ginger root

Seasoning mix A:
2 tablespoons soy sauce
1 tablespoon sake
1 tablespoon sugar
A dash of salt
A dash of synthetic flavoring
1 teaspoon fermented soybean yeast

Oil to be poured over the dish last:
1 teaspoon sesame oil
1 teaspoon vegetable oil




Directions

  1. Place the fish in a microwave-safe dish. Add the preliminary seasonings and set aside for approx. 15 minutes.

  2. Rinse the fermented soy bean yeast and drain well. Finely mince and place in a bowl, then mix with the seasoning mix A.

  3. Cut the Welsh onion and red bell pepper into very thin strips. Lightly rub the Welsh onion in a bowl with water, then rinse in running water and drain.

  4. Add 2. to 1., cover with plastic wrap and cook in a microwave oven at 500W for 2 to 3 minutes. (Adjust the cooking time according to the size of the fish.)

  5. Rinse the spinach in running water to wash off any sand. Dry and place it on a sheet of plastic wrap. Sprinkle with 1 tablespoon sake and a dash of salt, wrap and cook in a microwave oven at 500W for 1.5 minutes.

  6. Place the fish on a serving dish, pour some sauce over it and add the spinach on the side. Top the fish with the Welsh onion and pour the heated oil over it. Garnish with red bell pepper and Chinese parsley .

Tips

  • Adjust the cooking time in a microwave oven according to the size of the fish.
  • The nutrients and flavor of the spinach are retained by cooking it in a microwave oven.
