Nameko Mushroom Salad with Japanese Radish Dressing

nameko mushrooms
Nori (toasted laver)

6g (1 1/2 teaspoons)
20g (1 1/3 tablespoons)
16g (slightly more than 1 tablespoon)


Procedure

1 Boil nameko mushrooms briefly and drain.
2 Grate Japanese radish, place it on a reed screen to drain excess moisture.
3 Cut nori into very thin strips, using scissors.
4 Combine grated radish and the seasonings for the dressing, and mix lightly with nameko mushrooms. Serve in a bowl and mound thinly sliced nori high on top.
