Stewed Bell Pepper and Spring Onion

Procedure

‚P Remove the calyx and seeds from bell peppers, and cut lengthwise into 2-cm wide strips. Cut onion into 1-cm wide wedges. Remove the hard tip of stems from shiitake mushrooms and cut into 5-6 mm wide strips.
‚Q Combine the stock and seasonings in a pan, and bring to a boil. Add the vegetables and simmer.
‚R After the bell peppers become tender, add roughly minced red pepper and mix well.
