White Chicken Meat and Cabbage Salad with Ginger Dressing

ginger juice
white sesame

12g (2 teaspoons)
2g (2/3 teaspoon)
4g (1 teaspoon)
4g (slightly more than 1 teaspoon)


Procedure

1 Cut the cabbage into strips, boil briefly and drain.
2 Remove tendon from the chicken, season with sake and salt and boil till done. After the chicken is cooled down, separate into fine strips.
3 Combine the ingredients for the dressing. Squeeze dry the cabbage and toss it in the dressing with the chicken. Serve in a dish and sprinkle with roasted sesame.
