Cut off the top and bottom parts of the grapefruit. Cut off the
outside skin along with the white rind and the inside membrane,
using a knife. Insert the knife between the thin skin and the fruit
and remove each section of fruit.

Cut the cucumber into moderately thick round slices. Soak the
raisins in tepid water to steep.

Place the cheese in a bowl. Gradually stir in the vinegar and
oil. Sprinkle with pepper.
