Procedure

1 Cut off the top and bottom parts of the grapefruit. Cut off the outside skin along with the white rind and the inside membrane, using a knife. Insert the knife between the thin skin and the fruit and remove each section of fruit.
2 Cut the cucumber into moderately thick round slices. Soak the raisins in tepid water to steep.
3 Place the cheese in a bowl. Gradually stir in the vinegar and oil. Sprinkle with pepper.
4 Toss 1 and 2 in the sauce prepared in 3.
