Thinly slice the devilUs tongue. |

Remove strings from the celery. Cut the cucumbers and the
celery into thin sticks of equal length. Soak them in cold water to
make crispy and drain. Remove calyxes from the cherry tomatoes
and cut in half. |

Cut the ham into fine strips. |

Remove seeds from the red pepper and cut into thin rings. |

For the sauce, place the sesame seeds in a mortar and crush
them well, and stir in the red pepper and other seasonings. |

Place the sliced devilUs tongue flat along the edge of a dish.
Combine the slices of cucumber, celery and ham and place in the
center. Top with the cherry tomatoes and parsley, and serve with
the sesame sauce. |

- DevilUs tongue for eating raw has a low lime content so that it
can be eaten raw. It can also be boiled before use.
- Other vegetables, such as lettuce, daikon radish, onion or
kaiwarena (radish seed leaves with stems) may be used according
to preference.
Crushing sesame seeds in a mortar
Place a mortar on a wet towel to avoid slippage and crush with a
pestle. Because sesame seeds have a high fat content, they
become oxidized easily after crushing. Crush only the necessary
amount of sesame seeds.
