Procedure

‚P Wrap the tofu in a dishcloth and put it on a tilted cutting board. Place a light plate over the tofu and set aside for 10 to 15 minutes to remove excess water from the tofu.
‚Q Strain 1/3 of the tofu and cut the remainder into cubes.
‚R Cut the fish cake and the stone parsley into 2-cm long pieces and separate each piece of the fish cake into thin strips.
‚S Beat the eggs in a bowl, add the stock, salt and mirin, mix well and strain using a fine-meshed strainer. Add the remaining tofu strained in 2 and mix all the ingredients gently.
‚T Place an equal portion of cubed tofu in each bowl, pour the mixture prepared in 4 over it and top with fish cake.
‚U Heat water in a steamer and after it gives off enough steam, put 5 in, cook over high heat for approx. 2 minutes, then lower the heat and cook approx. 15 minutes more.
‚V Combine stock, soy sauce and mirin in a pan, bring to a boil and add the water and potato starch mixture to thicken the sauce.
‚W After 6 is done, pour the sauce prepared in 7, top with the stone parsley and serve.

E To check if the custard is done, poke it with a bamboo spit. If you see a clear liquid coming out, it is done.

Removing excess water from tofu using weight
To retain the shape, place a plate over the tofu wrapped in a dishcloth for a while. Or, heat the tofu wrapped in a dishcloth in a microwave for approx. 3 minutes for each block.
