Wash black soy beans, add water and salt and let stand in a pot overnight. |

Bring to a boil, reduce heat, cover with a paper lid and boil until soft. (Add hot water if necessary.) |

Add half of the sugar and boil for 10 minutes. Add the rest of sugar and boil until the liquid just covers the black soy beans. Add soy sauce, remove from heat let the flavors mix. |
