1 Mix 2 eggs and 1 egg white, add seasoning and boiled dashi (keep egg yolk).
2 Boil carrots and string beans and mix them with shiitake in 2/3rds of the egg mixture.
3 Put the carrot, string bean and egg mixture in a pot, and scramble until half done. Remove from heat, quickly add remaining egg mixture.
4 Put cooking paper in an oven container. Pour everything in it. Pour reserved egg yolk on the surface and grill in an oven at 170°C.
