Procedure

Combine the ingredients for the marinade in a shallow square pan.
Remove the skin and bones from the salmon and cut into bite-size slices. Soak in the marinade.
Thinly slice the red onion. Boil the string beans and cut in half on a slant.
Melt the butter in a frying pan over medium heat and fry both sides of salmon. Sprinkle the white wine and cook briefly.
Place the salmon on a dish and add the endive, red onion and string beans on the side.
