balsam pear (approx. 300g)
momen tofu
dried bonito flakes
egg

Cut the balsam pear lengthwise in half, scoop the seeds out using a spoon, and slice thinly (the thinner the slices are, the better the bitterness can be removed).
Sprinkle with 1/2 teaspoon salt and mix well by hand until the balsam pear becomes soft. Rinse with water and squeeze dry. |

Heat the lard in a frying pan over high heat, tear the tofu into large pieces by hand and add to the pan. Fry well until the surface of the tofu turns golden brown.
Add the bonito flakes as you separate them, mix and continue frying. Season with 1/3 teaspoon salt. |

Add the balsam pear slices to the pan and cook briefly. Beat the egg and pour into the pan and stir while cooking. Lastly, add the soy sauce for a good aroma, and serve on a dish. |
