| 1 | Place the gizzard on a cutting board with the white side down. Tilt the knife to scrape the white film off. Cut in half and make several shallow cuts on the surface. |

| 2 | Bring the water and sake mixture to a boil, add the gizzard and cook thoroughly. Drain. |
| 3 | Cut the quing geng cai on a slant into 2cm-wide pieces. |
| 4 | Combine the ingredients for the seasoning mix. |
| 5 | Heat a frying pan over medium heat, add the sesame oil, and then the ginger, quing geng cai and gizzard, and stir lightly while cooking. |
