 mirin

Procedure

Place the gizzard on a cutting board with the white side down. Tilt the knife to scrape the white film off. Cut in half and make several shallow cuts on the surface.
Bring the water and sake mixture to a boil, add the gizzard and cook thoroughly. Drain.
Cut the quing geng cai on a slant into 2cm-wide pieces.
Combine the ingredients for the seasoning mix.
Heat a frying pan over medium heat, add the sesame oil, and then the ginger, quing geng cai and gizzard, and stir lightly while cooking.
Add the seasoning mix, stir quickly, and serve on a dish.
