Miso Soup with Taro and Daikon

Dried daikon strips
Green beans
Sesame seeds

 2g (2/3 teaspoon)
Seasoning Serves 1 Serves 4
Stock
Light-colored miso
 150g
10g
600g (3 cups)
 40g (2 1/4 tablespoons)


Procedure

Steep the dried daikon strips in water. Peel the skin off the taro and cut it into 5mm-thick slices. Boil the green beans to a bright green and cut them on a slant.
Cook the taro in the stock for a while. Squeeze dry the daikon strips and add to the stock along with half of the miso. Cook some more.
After the daikon is seasoned, add the remaining miso and the beans to finish.
