Peel the skin off the lotus root, grate it and drain lightly. |

Remove the vein from the back of the prawn and boil briefly. Remove the shell and cut into small pieces. Boil the green beans and cut into small pieces. Steep the Jew's ear in water and cut into thin strips. |

Mix the grated lotus root, prawn, green beans, Jew's ear and the salt together. Place 1/4 of the mixture on a sheet of plastic wrap, wrap it tightly by twisting the ends of the plastic wrap together. Repeat the same procedure to make four round dumplings. Cook them in a steamer. |
