Make many shallow cuts on the surface of the squid, and cut into bite-sized pieces. Season with the sake, salt and pepper and coat with the potato starch. Briefly boil the squid in water at around 80. |

Cut the cucumber lengthwise in half, and then cut each piece on a slant into thin slices. Cut the carrot into thin strips and boil briefly. Mince the chive. Grate the ginger root and squeeze out the juice. |

Combine the seasonings. |

Heat the oil in a Teflon frying pan and briefly fry the carrot, cucumber and squid over high heat. Stir in the seasoning mix, and add the chive, sesame oil and ginger juice to finish. |

Place it over a bed of lettuce, and serve hot. |
