Procedure

‚P Drain the tofu. Cut the nira into 3mm-wide rings. Mince the zhacai, garlic and ginger root.
‚Q In a bowl, knead the minced pork sprinkled with salt and pepper. Add the tofu and mix well. Place a sheet of pasta on your hand and put some of the pork mixture in the center. Using a finger of your other hand, wet the pasta along the edges. Fold the pasta in half, wrapping the pork mixture inside, and seal the edges by pleating. Repeat the procedure.
‚R Heat a frying pan over high heat and add some oil. Lower the heat to medium-high and place the dumplings in the pan. When the surface becomes lightly browned, add some water and cover. When most of the water evaporates, remove the cover.
‚S Continue frying until the water is completely gone. Serve with the ponzu soy sauce.
