Rinse the agar and let it steep in water. Combine the gelatin and the 40cc of water for steeping. |

Cut the Chinese yam into 1-1.5cm wide thin strips. One strip is used per serving. |

Boil the green soybeans until tender and strain. |

Heat the fresh stock and add the agar as you tear it into small pieces . Also, add the gelatin. After the agar and gelatin have melted completely, strain the stock. |

Combine 4 and 3 in a bowl, and cool the mixture by placing the bowl in ice cold water. Pour the mixture in a shallow square pan and chill in a refrigerator until it sets. |

Cut 5 into smaller pieces and place in serving dishes. Place a yam strip on each serving and add some horseradish over it. |

Combine the ingredients for the seasoned stock in a pan, bring to a boil, and then chill. Pour it in the serving dishes and serve. |
