Cut the sweet potato into round slices. |

Remove the core from the apple, and cut into either round slices or semicircular slices. |

Place the sweet potato slices in a pan, and the apple slices over them. Add just enough water to cover the apple slices. Add the sugar and salt and cook. |

After the sweet potato and apple are done, remove from the heat and allow to cool. Then, chill in a refrigerator. To serve, top with mint leaves. |
