| Unsalted butter (or oil) to coat the inside of the dish |

| ■Pastry | |
| 1 | Sift the flour on a board into a heap. Make a dent at the center and place the salt and cold butter in it. Cut the butter with a skepper (metal spatula) into smaller pieces and mix with the flour. After the butter is cut into very small pieces, rub the mixture with your hands to make fine flakes. |

| 2 | Form a heap with the flakes, dent it at the center and place the egg yolk in it. While adding the water gradually, mix all the ingredients together using your hands. |
| 3 | Knead the dough until smooth and soft, like an earlobe. Put it in a bowl, cover with a wet dishcloth, after tightly squeezing dry, and place it in a refrigerator for 30 minutes. |
| 4 | Cut the dough into quarters and place them on a floured board. Flatten the dough to a thickness of 3mm using a rolling pin. | 5 | Lightly coat the inside of a tart dish with butter and spread 4 inside. Roll the rolling pin over the dish to cut off the unnecessary dough. |

| 1 | Beat the egg in a bowl and season with salt and pepper. |
| 2 | Add the milk and heavy cream and whisk the mixture. Adjust the taste with salt, pepper and cheese. |
| ■Ingredients | |
| 1 | Separate the shimeji mushrooms into smaller bunches. Cut the mushrooms into 2-3mm thick slices. Cut the onion into thin slices. Cut the bacon into 2cm cubes. |
| 2 | Fry the bacon in a frying pan. When the fat begins to melt, add the mushrooms and onion, and season with salt. |
| ■Finish | |
| 1 | Make several holes on the bottom of the dough and place the fried ingredients and sauce in it. Bake in an oven at 180℃ for 15-20 minutes. |
