| 1 | Rinse the black soybeans. Combine the hot water and all the seasonings in a pot, and add the soybeans. Allow the beans to steep overnight. |

| 2 | When the soybeans become swollen, heat the entire ingredients in the pot and bring to a boil. Turn the heat down so that the contents won't boil over, place a lid slightly smaller than the pot over the contents, and cook until the beans become tender. (If it boils down too much while cooking, add some water.) ※There should be just enough liquid to cover the beans when they are done. |
| 3 | Cut the top part off each citron to make a lid. Scoop the pulp out to make a cup. Fill the citron cups with the beans, and garnish with the Chinese artichokes to serve. ※oak the citron cups in water used to rinse rice for a while to remove harshness from inside the cups. |
| ・Chinese artichokes・・・A perennial plant indigenous to China. Tubers at the ends of the rhizome that enlarge during fall are harvested from late fall to spring and pickled in salt or vinegar. Often used to garnish black soybean dish for New Year. They are shaped like a spiral shell. |
