Thread-thin dried bonito strips

Skin the yam and soak in vinegared water to remove the harshness.. |

Wipe the sliminess off the surface of the yam, and cut it into match-sized sticks. |

Combine the sweetened pickled ume paste, mirin and soy sauce in a bowl, add the yam
and mix well. Place the dish in small serving bowls and pile with the bonito strips. |
