Cut the ingredients:
- Cut the onion into 2cm thin strips.
- Quarter the mushrooms and shiitake mushrooms.
Separate the maitake mushrooms into smaller
bunches.
- Roughly smash the garlic.
- Mince the parsley.
- Cut the pork into 12 equally-sized pieces,
3 pieces for each serving.

Sprinkle the pork with salt and pepper, then
coat the surface with the flour. |

Fry the garlic in the olive oil heated in
a thick-bottomed pan. When you smell the
aroma, add the pork. |

Brown the surface of the pork and remove
it from the pan. Add the onion and fry until
it becomes tender and its color becomes transparent.
Add the white wine and allow it to flame
to remove the alcohol. |

Add the wine vinegar, stock, mushrooms, pork
and rosemary to the pan, and continue cooking. |

When the pork is thoroughly cooked and the
sauce begins to thicken, season with the
salt and pepper and add the parsley. Slice
the tomato, saute briefly and serve with
the stew. |
