Rinse the beans and combine them with water
three times the volume of the beans. Steep
the beans overnight and drain. |

Place the beans in a pot and add just enough
water to cover them. Place a lid directly
over the beans and bring to a boil. Turn
the heat down, remove the lid and skim the
scum off the surface. Continue cooking for
4 to 5 minutes, and drain the water. |

Once again, add just enough cold water to
cover the beans, place the lid directly over
the beans and cook over high heat. When it
begins to boil, lower the heat and let it
simmer for approx. one hour. While cooking,
add a small amount of water once in a while. |

Add the sugar and continue simmering. Add
the salt and remove from the heat. Allow
enough time for the beans to cool and be
seasoned well. |
