Green soybeans
Dried bean curd
Stock
Salt
Soy sauce
Arrowroot starch or potato starch
Water |

2/3 tablespoon
2/3 tablespoon

1 tablespoon |

Remove the beans from the pods and also remove their thin skins. Boil the
beans in salted water and then soak them in cold water to cool. Strain
the beans and gradually mix them with the stock. Heat the mixture in a
pot. |

Season (1) with the salt and soy sauce. Stir in the arrowroot starch and water mixture to thicken the soybean mixture. Serve in individual bowls. |

Wrap the dried bean curd in a wet dishcloth or soak it in water to steep.
Soak it in boiling water and add to (2) to serve. |
