Bracken-Starch and Brown Sugar Dumplings Served Cold

Ingredients Serves 4
Bracken starch
Brown sugar
Water
Soybean flour mixed with sugar
50g

300cc

Procedure

‚P Combine the bracken starch and brown sugar in a pan. Add the water gradually while stirring the mixture well so as not to make any lumps. Strain the mixture.
‚Q Place the mixture back in the pan and heat it over slightly lower than medium heat while stirring it with a wooden spatula.
‚R Turn the heat down and cook the mixture thoroughly until the color turns clear.
‚S Place (3) in a pastry bag using a 1.5cm round tip while it is hot. Squeeze out 2cm each time and drop the dumplings in cold water.
‚T Drain the dumplings, and coat them with the soybean flour mixed with sugar to serve.
