| Fresh Pacific saury Potato salad Pickled ginger roots Citron Marinade Sake Soy sauce Mirin Citron rind |
2 8 tablespoons 30g 2 tablespoons 2 tablespoons 1 tablespoon 8 pieces |

| P | Cut the Pacific saury into four fillets. If they are too thick, make a cut in each piece and open to make them thinner. Place the fish in the citron marinade for 3 to 5 minutes. |

| Q | Drain (1) and place 1/4 of the potato salad on each piece. Roll the fish and fasten with toothpicks. |
| R | Bake (2) in an oven at 200°C. Apply the citron marinade over the fish rolls several times while baking. |
