Qing geng cai (Chinese white rape)
Jew's ear
Chicken-bone stock (granule-type)

Procedure

‚P Steep the Jew's ear in water and cut it into thin strips. Cut the Chinese white rape into bite-sized pieces. Strip the tendons off the chicken and slice it on a slant.
‚Q Heat the oil in a frying pan and stir-fry the Chinese white rape briefly. Sprinkle the slices of chicken with the salt and sake, and coat them with the potato starch. Then, dip them in boiling water.
‚R Prepare the stock, heat it, and add the chicken, Chinese white rape and Jewƒ†s ear. Season to serve.
