Procedure

‚P Crush the soy beans using a mortar and pestle, and add the yam after grating and mix.
‚Q Add the minced chives, grated ginger, egg and potato starch to ‚P.
‚R Scoop the mixture up using a spoon, drop each spoonful into deep oil at 170oC and fry until crispy.
‚S Spread the beefsteak leaves on a dish and place the soybean balls over them. Garnish with the pickled ginger.
