Crush the soy beans using a mortar and pestle, and add the yam after grating and mix. |

Add the minced chives, grated ginger, egg and potato starch to P. |

Scoop the mixture up using a spoon, drop each spoonful into deep oil at 170oC and fry until crispy. |

Spread the beefsteak leaves on a dish and place the soybean balls over them. Garnish with the pickled ginger. |
