Japanese Radish and Dried Apricot Salad

Thinly slice the radish on a slant, and then cut into thin sticks. Mix them with the salt, black pepper and oil. |

Sprinkle the dried apricot with the lemon juice and water, and cover with plastic wrap. Heat in a microwave oven for approx. 30 seconds and mince. |
