Japanese Radish and Dried Apricot Salad

Daikon (Japanese radish)
Dried apricot
Watercress

Black pepper
Oil
Lemon juice
Water
0.3g
 Small amount

1.2g (1/4 teaspoon)

8g (2 teaspoons)
8g (2 teaspoons)
 16g (slightly more than 1 tablespoon)


Procedure

Thinly slice the radish on a slant, and then cut into thin sticks. Mix them with the salt, black pepper and oil.
Sprinkle the dried apricot with the lemon juice and water, and cover with plastic wrap. Heat in a microwave oven for approx. 30 seconds and mince.
After the radish softens, combine with the apricot and watercress leaves to serve.
