Burdock Root Salad
with Miso Mayonnaise Sauce

Mayonnaise
Dark-colored soy sauce

 16g (slightly more than 1 tablespoon)
4g (2/3 teaspoon)


Procedure

1. Cut the burdock root into thin sticks or into shavings. Boil them in water with a small amount of vinegar.
2. Combine the seasonings and mix with the burdock pieces after draining them well. Place in a dish and sprinkle with minced chives.
