Slice the pork into 5mm-thick pieces and season with the ginger juice, salt and pepper. |

Steep the Jew's ear and cut into thin strips. Cut the carrot, potato, bell pepper and onion into thin strips. |

Combine the salt, sugar, lemon juice, soy sauce and water to make seasoning mix. |

Coat the pork slices with flour. Heat the oil in a frying pan and cook the pork. After it is done, remove from the pan. |

Reheat the same pan and add the oil for cooking vegetables. Fry the vegetables and add the pork and the seasoning mix. Dissolve the potato starch in water and stir in to finish the dish. |
