Rolled Ham Stuffed with Salad

Ingredients
Serves 4
2 potatoes
1/2 cucumber
1/4 cup corn (frozen)
12 thin slices of ham
4 tablespoons mayonnaise
Vinegar, salt and pepper
Garnish 4 cherry tomatoes
4 leaves of Boston lettuce

Preparation

Skin and dice potatoes into 1cm cubes, then cook in water till tender. Sprinkle salt over the cucumber and roll and rub against a cutting board. Cut lengthwise into quarters, then crosswise into small cubes.
Soak frozen corn in boiling water to thaw, and drain. Remove calyx from cherry tomatoes and cut deep wedge shapes into the top without cutting through.

Preparation

Procedure
1  Combine potatoes, cucumber and corn in a bowl, and season with vinegar, salt, pepper and mayonnaise. Mix well.
2  Roll ham into cone shapes, stuff with (1) and fasten with a toothpick.
Serving
Serve over a bed of Boston lettuce, and add cherry tomatoes on the side.
