Spicy Soy-Flavored Sardines


Deep fried sardines are soaked in spicy soy-flavored sauce while hot.

Ingredients
sardines (small) 5
Spicy soy-flavored sauce sake 2 teaspoons
sugar 1 teaspoon
soy sauce 1 1/2 tablespoons
mirin (once boiled) 2 teaspoons
Red pepper mix -
water 1 tablespoon

Preparation
Scrape the scales off the sardines, rinse and dry the surface. Sprinkle with salt and pepper, and coat with flour.
Combine the ingredients for the sauce in a shallow square pan and mix well.

Procedure
Heat oil to 170oC and deep fry the sardines until crispy.
Place the deep fried sardines in the sauce while hot, and soak them for approx. 15 minutes to season.
Serving
Place the sardines on a serving dish, and pour some sauce over them. Slice green and red bell peppers into thin strips, boil them briefly and soak in cold water. Dry the strips and place on top of the sardines.
