1Scrape the scales off the sardines, rinse and dry the surface. Sprinkle with salt and pepper, and coat with flour.
2Combine the ingredients for the sauce in a shallow square pan and mix well.

1Heat oil to 170oC and deep fry the sardines until crispy.
2Place the deep fried sardines in the sauce while hot, and soak them for approx. 15 minutes to season.

Place the sardines on a serving dish, and pour some sauce over them. Slice green and red bell peppers into thin strips, boil them briefly and soak in cold water. Dry the strips and place on top of the sardines.
