Breaded and Fried Sardines


Sardines are inexpensive and nutritious.

Ingredients
sardines  2
Coating Flour -
Beaten egg -
Bread crumbs -
Tartar sauce -

Preparation
下ごしらえ
Remove the scales and heads from the sardines. Cut the ventral side on a slant and remove the entrails. Rinse the fish well and dry. Open the fish with your hands, remove the back bones and season with salt and pepper.

Procedure
Coat the sardines with the flour, egg and bread crumbs in this order.
Heat plenty of oil to 180oC, and deep fry the sardines till golden brown and crispy.
Serving
 Place the fish on a dish, and add parsley and tartar sauce on the side.
