1Rinse the bean sprouts and remove all the fibrous roots. Skin the carrot and cut into very thin sticks. Remove the core from the cabbage leaves, roll them up and cut into thin strips.
2For the mayonnaise sauce, combine the ingredients and mix well.

1Heat some oil in a frying pan and cook the carrot briefly. Add the cabbage and bean sprouts and continue cooking. Season lightly with salt and pepper.

Pour the sauce over the dish to serve.
