Pickled turnip (numerous cuts are made to make it resemble a chrysanthemum flower) |

PCut the fish into smaller pieces (you may want to make an X-shaped cut on each piece to allow them to season better.
QThinly slice the citron and remove any seeds. Cut the pickled turnip into smaller pieces.
RCombine the mirin, soy sauce and stock in a shallow square pan. Add the citron slices to the mixture to make the marinade. Marinate the fish in it for 30 - 40 minutes.
SDrain the fish and grill it in an oven especially for grilling fish until the surface turns crispy. While grilling, apply the marinade over the fish several times. (If you use a regular oven, grill the fish at 200 for 7 - 8 minutes, and apply the marinade several times.)
TPlace the fish on serving dishes. Add the pickled turnip on the side.

EThe fish can be cooked in a frying pan lightly coated with vegetable oil. If you do so, be careful not to burn the fish.
