Pan-Fried Rockfish


A unique pan-fried rockfish dish.

Ingredients
Serves 4
Rockfish (medium size) 4
Butter sauce Butter 60g
Salt Small amount
pepper Small amount
Lemon juice 1/2 lemon
Soy sauce 1 1/2 teaspoons
Minced parsley -
Salt -
pepper -
Flour -
vegetable oil -
Garnishes Broccoli boiled in salted water -
Cauliflower boiled in salted water -

Procedure
作り方
Remove the head from the fish, cut it open from the ventral side and remove the entrails. Rinse well, dry, and cut into fillets.
Sprinkle 1 with salt and pepper and coat with flour. Pat the fish to remove any excess flour.
Heat the vegetable oil in a frying pan and fry both sides of 2 until crispy and golden in color.
Prepare the butter sauce. Melt the butter in another pan and continue heating until it becomes slightly brown. Season with salt, pepper, lemon juice and soy sauce.
Place the fish on serving dishes and pour the butter sauce over it. Top with the minced parsley and add the garnishes.
 
ポイント
・-The side of the rockfish cooked first should be placed up when served. Make sure to fry the fish long enough so that it becomes crispy and golden in color.
・Rockfish has a plain kind of taste that goes better with a rich-tasting sauce. It will taste even better if you add some spices.
